Pumpkin Pancakes with a Maple Butter Sauce
To make the maple butter sauce, you’ll need:
- ¾ cup maple syrup
- ¼ cup butter
- ¼ cup brown sugar
- walnuts (optional)
Okay, the original recipe I’d been looking at called for a lot more butter and sugar, but I just couldn’t justify using all of that. Thankfully, my version turned out just fine, and I didn’t have to feel guilty about ingesting half a cup of butter on my own.
In a small saucepan, heat the maple syrup, butter, and brown sugar on medium heat. Once the butter and sugar have melted, stir until the sauce begins to thicken slightly. Add in the walnuts and continue to cook for a minute or so. Let the sauce cool slightly before pouring over pancakes.
